Preheat oven to 375F. Melt 2 tablespoons of butter. Pour mix of Diabetic Kitchen into the bowl. Add 2 large eggs, melted butter and 2 tablespoons of whipped cream. Mix it thoroughly. Add 4 teaspoons of pecans and mix again. Carefully spread a little melted butter around the insides of each muffin cup. Divide batter into 6 prepared muffin pan cups and sprinkle with pecans. Bake for 23 minutes, if you use silicone cups, or 21 minutes using metal. Leave to cool.
