The defatted linseed meal is an unbeatable low carbohydrate diet - it contains only 3g of carbohydrates, which is an incomparably low value compared to other nut- or seed- flours. This flour is especially valued in the diet of paleo because of its binding properties (it is a partial substitute for gluten), but first of all it is added due to the taste-enhancing qualities of baked linen flour. Paleo diet to the taste of plain wholemeal bread.

Flax meal is a 100% natural product, free of preservatives, colorants and aromas - in healthy cuisine it is replacement for wheat flour, used for cakes, biscuits, dumplings, pancakes, as well as meat buns or soups. It is good to know that partial defattening of flax seeds facilitates the use of flax flour in baked goods, as it becomes lighter and less susceptible to the formation of flax.

Flaxseed flour is produced by grinding raw and unroasted flaxseeds - because the milling process is controlled at temperatures below 40 degrees Celsius, flaxseed flour retains valuable vitamins, minerals and enzymes - and what is to be kept! Flax flour is one of the most valuable flours: it is a source of calcium, phosphorus, iron, zinc, copper, chromium, lecithin and vitamin E and B vitamins. The flax meal is characterized by high soluble and insoluble fiber content as well as vitamin E and Lignans, being strong antioxidants.

Flax protein is one of the most digestible, most valuable and fully digestible vegetable proteins. The digestibility index of flax protein under the influence of human digestive enzymes is higher even than the digestibility of milk protein. Flax protein is also exceptionally rich in exogenous amino acids, essential for the proper functioning of the body, primarily the source of leucine, lysine, phenylalanine and tryptophan. The high content of tryptophan affects the eyesight and the condition of the skin.
