It is easy to use - it can be used in a ratio of 3: 4 as an alternative to ordinary flour - the flour rises after adding baking powder, holds the structure of the shortcrust pastry, is flexible and can be rolled on e.g. tart or pizza base.

How to use Max De Génie Low Carbohydrate Flour Mix

  • replace up to 70% of wheat flour in the recipe with a low carb mixture - with the same amount of liquids, this flour absorbs more moisture than traditional flour
  • for example, for a recipe containing 200g of classic wheat flour, replace it with just 140g of our Low Carb Blend.
  • can be used for sweet preserves (pancakes, biscuits, cookies, cookies ...) or dry (cakes, quiche dough, spicy muffins, cheese waffles ...)
  • since the flour is naturally gluten-free you can add a few grams of psyllium fiber to bind the dough better, you can also use xanthan gum or guar gum
  • Limitations: this flour is gluten-free, it will be complicated to use in traditional bread recipes (bread, brioche, pizza dough, etc.) - using it in such recipes requires some practice and experience, or the use of a dedicated gluten-free recipe
