Chufa ground almonds, also known as tiger nuts, are dried tiger tubers found in Southern Europe, South Asia, Africa and the Americas. Contrary to the name, they are not nuts - this plant forms tubers underground, which contain many valuable substances, including about 20% of oil which has nutritional properties similar to olive oil. The tubers are harvested after the summer season in October, then roasted and ground to resemble cocoa. In addition to oil, wrinkled tubers are a source of protein, fiber and starch as well as valuable fatty acids: oleic, linoleic, palmitic, stearic and myristic. Ground almond flour also contains albinoids - proteins that have a fiber-based structure and are more resistant to destructive factors and enzymes, and vitamin E.

Ground almond tubers can be eaten raw, although it is recommended to soak them in water or milk as they are very hard. They have a slightly nutty, sweet flavor, described as a combination of hazelnut and traditional sweet almonds. Plant milk made of edible tibia (a similar method to coconut or almond milk) can successfully replace cow's milk, especially in the case of people allergic to lactose. Chufa almonds can be prepared like vegetables, i.e. boiled, stewed or fried. Ground almond flour can be used for various types of baking - cakes or cookies.

Ground almonds are included in the so-called survival food, because they contain almost all the ingredients that the human body needs to survive - they are also a source of starch, fat, protein, high-quality fiber and essential vitamins and minerals - archaeological research proves that they constituted up to 80% of the Paranthropus boisei diet that lives in East Africa millions of years ago the ancestor of man - which makes them a palaeological superfood :) Chufa are naturally sweet, because about 1/3 of carbohydrates contained in it are sugars, at the same time very high fiber content promotes the feeling of satiety and improves the digestive system. Ground almonds are plants that have an alkaline effect on the body. Ground almonds are a rich source of resistant starch - a component of insoluble fiber that is not digested in the small intestine and, after reaching the large intestine, has a prebiotic effect, stimulating the development of normal intestinal bacterial flora.
